Easy Chicken Mole with Mexican  Rice

Easy Chicken Mole with Mexican Rice

1 – Whole Chicken

2 – Favor tomato and 2- chicken cube

1 – Box of ready Mole sauce

1- Tablespoon of sugar

1 – Kilo of corn tortillas

1 – Large onion – Chopped

3 – Garlic Cover – chopped

2 – Jalapenos – Chopped

1-1/2 tablespoon olive oil

1 – Cup of rice

2 ½ cups of water

Now for the fun part putting it all together !!

First wash and clean your chicken!

In a large pot fill it up half ways with water then add in the whole chicken long with the one of each favor cubes .Cook until the chicken is soft and ready to fall off the bone ..

Once the chicken is done drain the water out and let sit and cool down...Once cool you can started pulling it a part and placing the shred chicken in to another bowl …

Now for the rice: Add a tablespoon of oil to a small pot then add 1 cup of rice and one of each favor cubes stir and then add the 2 ½ cups of water , cook until rice is soft

Now in a large frying pan add 1 ½ tablespoon of olive oil then add the chopped onion and chopped jalapenos and chopped garlic , stir around then add the chicken to the pan a and stir and salt for taste once done please sit to the side ..

Now for mole sauce: In a small sauce pan on low heat add the whole box of mole sauce and stir add a tablespoon of sugar if you like it to be a little more of a sweeter taste when you see little bubbles start forming up turn the heat off .

Now for the corn tortillas: warm them up on a hot skillet by placing a little oil on them, it makes them easier to roll...

Now to plate: Get three tortillas place a spoon full of chicken in each one then roll them up. Then add the mole sauce on top and add the side of rice and sever enjoy !!!
